Halloween is right around the corner, and there’s no better way to celebrate than with food that’s as fun as it is delicious. Nachos have long been a go-to for gatherings, but at Chapala’s Mexican Restaurant, we’re giving them a Halloween twist that will thrill adults and kids alike: Monster Nachos!
Monster Nachos Recipe
These Monster Nachos are layered with gooey cheese, ghoulish green guacamole, and other tasty toppings. Perfect for the Halloween season. Pile it high and serve it as a shareable, spooky treat for everyone to dig into!
Ingredients
Tortilla chips
1½ cups shredded cheese (Cheddar, Monterey Jack, or a Mexican blend)
1 can black beans, drained
½ cup sliced black olives (for the “monster eyes”)
1 cup prepared guacamole (use green food coloring for extra spookiness!)
½ cup sour cream
½ cup salsa or pico de gallo
Fresh jalapeño slices or sliced green bell pepper (for “monster scales”)
Optional: pickled onions or radishes cut into fun shapes (for added Halloween flair)
Instructions
Prepare the Base: On a large, oven-safe platter, spread out the tortilla chips in a thick layer.
Add Layers: Sprinkle the shredded cheese and black beans over the chips. Add fresh jalapeño or bell pepper slices for a “monster scale” effect.
Melt It: Place the platter in the oven at 375°F for 5-7 minutes or until the cheese is melted and bubbly.
Decorate: Remove the nachos from the oven and top with salsa or pico de gallo. Use a piping bag or small spoon to dot sour cream onto black olives, creating “monster eyes.” Scatter these spooky eyes over the nachos for a fun look.
Add Guacamole: Scoop out dollops of green guacamole to add a “slimy” look, and add a bit of green food coloring to make it extra eerie.
